I went grocery shopping in person this week. I do enjoy ordering through apps, but sometimes my produce isn’t exactly what I want, but it saves so much time!!! I shop at home while looking to see what I have or need. Anyway, going in the stores provides more inspiration for meals and brings back pre-pandemic memories 🙂
I purchased LOTS of greens – mustard greens, turnip greens, dandelion greens, dino kale, cabbage, mint, and basil. I also purchased purple cabbage, beets, sweet peppers, nectarines, red and green pears, a HUGE seeded watermelon, lemons, limes, and ginger. My fridge was packed with color!
From all of those groceries, here is what I am eating this week:
- BREAKFAST
- green or red smoothie
- bowl of breakfast quinoa with chia seeds, pumpkin seeds, almonds, and raisins
- bowl of cream of buckwheat
- buckwheat pancakes (if I want something fun on the weekend)
- LUNCH
- greens, lima beans, & quinoa
- cabbage, black beans, & quinoa
- greens, mung beans, zucchini spirals
- curried vegetables over quinoa
- DINNER
- pesto kelp noodles (non-dairy pesto)
- romaine lettuce salad with almonds
- bowl of fruit with nuts and seeds
- green or red smoothie
- SNACKS
- nuts and seeds: pecans, almonds, walnuts, & sunflower seeds
- fruit: nectarines, pears, watermelon, cantaloupe
- blue corn chips and guac
- puffed millet with raisins
