One of my favorite holiday is Thanksgiving… This is probably because I LOVE Thanksgiving food. A few years back, I would make sure I had a couple of potato dishes, some Mac-n-cheese, green beans AND greens, and a roll or cornbread. Please know that I ALWAYS left room for dessert: sweet potato pie, apple pie, or some coconut cake, and it I was at my Auntie’s house, I would make room for that amazing banana pudding, even though I would have so much phlegm in my through the next day.
Well, this year, I did better! I did not get all of my faves, but I did put a healthier spin on them: green beans, mustard greens, corn and squash, honeyed butternut squash, and some black lentils. For my son, I wanted to make some cookies that we’d both be able to enjoy, so we made some vegan buckwheat chocolate chip cookies. They were surprisingly tasty, and I probably ate too many of them!
Even though I did not make these for Thanksgiving this year, I was delighted to see that a grocery store I frequent now carries purple sweet potatoes!
